Christmas is a time for luxury. So, naturally, my recipe for December is a classy one. I grant you, toast is hardly recipe fodder - but if Nigella Lawson can start a TV series with a recipe for avocado toast, I think we can kick off the festive cheer with it here at Sarah & Bendrix.

I love using goats milk yoghurt for this recipe because it gives an extra sharp taste, but if you’d rather stick to plain ol’ dairy then that’ll be just fine too. Merry Christmas, everybody!

Serves 2

4 slices of rye sourdough

¼ cucumber

3 tbps goat yoghurt

small handful chopped dill

salt and pepper

120g salmon

lemon juice to serve

  1. Chop your cucumber into ½ centimetre chunks and mix in a bowl with the yoghurt, dill, salt and pepper.

  2. Toast your slices of bread, then pile on the cucumber yoghurt mixture.

  3. Arrange the smoked salmon on top and add a sprig of dill then squeeze with a little lemon juice and enjoy.

That looks so delicious. It’s New Year’s Day already, but same rules apply. I just bought some smoked Scottish salmon, and so will do some little sandwiches for myself.
